Yeah on my first watch I assumed the biker had his head down and didn't see it. But on a rewatch, you can clearly see the rider see the truck and prepare for impact by... attempting to jump it or something.

Agreed. That bike had three business days to stop.

Just because you have the right of way does not mean that you will always get to use it.

Plot twist: the bike didn’t have brakes and the driver of the truck somehow knew so he pulled in front to help the biker stop, knowing he would land on the soft pad of cargo that the truck was carrying

Oncoming traffic was far away enough and the moped driver didn't pay attention at all. Probably not even working brakes. So they are more at fault.
